from a "newbie" as such - how would I lay it off ?

Ok lets say you get thru to the Geelong game and you need the game to go over 200.5 points and Geelong to win -13.5 to win $483-.

Lets say your confident on Geelong covering but not the total game score which might cost you the collect therefore you back the under, suggest -

Under 200.5 points for $50- to return $95-

Total Spend on Bets $55-
Geelong win by over 13 points and game goes over 200 points you profit $433-
Geelong win by over 13 points BUT game goes Under 200 points you still profit $40-

Basically you are reducing the profit on the original bet to get a collect either way...you can obviously play around with the figures
