Help - Cooking Question

Got a feeling a Tomato based Pasta sauce Im making has too much chilli and will be too hot for others - Any suggestions on an ingredient(s) I can include to reduce the heat impact of the chilli?

Not sure how it would work with your sauce but the best thing for taking the heat out of a chilli dish is yoghurt...I find the Greek type works best...cream will also help but not as good imho.

Thanks Jac, I thought about Yoghurt/Milk/Cream but not sure how that will fit in

Not much you can do CP other than making another batch.

I like mine hot, but the other wusses in the house don't so I add my desired amount of arse burner after I've served theirs up.

Yeah I forgot the missus was going to eat it too lol, oh well, I'll a nice warm cup of HTF up to it and she'll be apples :D

OK if you have some yoghurt or cream there you could...

A...Tell them you're unsure and let them taste the sauce and see if anyone finds it too hot...if they don't then you're fine.
B...Take a little of the sauce and try adding some youghurt etc to check how it tastes and to make sure it won't curdle or anything.
C...Put a pot/dish of yoghurt etc on the table and tell them to help themselves if they find it a bit hot.

I've used yoghurt in an Arrabiatta(sp) sauce before and actually really liked it...creamy but slightly sour. We all make kitchen cock-ups...usually easier to fess up than try to cover-up.

many many more tomatoes - that'll reduce the heat. You have to get the ratio down re tomatoes:chilli

CP, all I can think of is:

- simply double the volume without adding anymore chilli
- load up the sugar and salt (not sure this would help)
- yoghurt, as JAS said
- start again :lol:

She said start again, and freeze the hot one in batches for yourself at later dates, or invite SJABC and me around for dinner this week

Actually, as is my prerogative, I've changed my mind again, kinda...if your missus is breast-feeding young Ned then any chilli at all might not be a good idea...pretty sure my No1 godson's mum had to be careful what she ate cos it could affect her milk and in turn the baby...no doubt some will have suitably innapropriate comments about that. Probably safest to make her a seperate batch of sauce and save the other one for yourself.

LOL Thanks for your help guys ... Was a real spur of the moment situation last night, I defrosted the wrong meat and then thought "oh well bugger it, Ive gotta use it now" ... No problem I'll whip up a Ragu style sauce.

It wasn't until after I'd added the chilli that I'd discovered Mrs P had used nearly all of the tinned tomatoes and ALL of the puree, leaving me rather short.

As it turned out, I chucked the cooked pasta in for the last process of cooking (whether that absorbed some of the heat I don't know) and it didn't turn out too hot.

I must admit, when I first met the better half she was NOT a chilli person at all, but I've managed to change that pretty well over the years and she ate the dish without breaking into any great sweats, so all was good.

Appreciate the advice though guys :)

Try peeling 2 or 3 potatos and boil them until soft (not mushy) in the mix.

Remove the spuds and try them. Chilly Spuds yum.

Spuds will absorb some of the chilly. ;)
