Russian imperials are best left minimum of 1 year, longer is better. Mine are normally aged between 2 and 3 years and only 1 year for my stouts and porters.

a few days on, still haven't changed the temp in the sauna but a few of the brews are slowly fermenting out.
so im hoping bottling day might be on sunday or even next weekend.
ill be happy if 2 are ready on sunday and 2 for next weekend.

Bottled up my 2 canadian blondes

And cos I used the US-05 Yeast, ive decided to try and reuse it in future brews.
It should create a faster start to the fermentation process.

I know of some guys who once bottle a brew dump in the contents for the next brew on top. However, the beers have to go from a light to dark profile.
Im contemplating doing it once I bottle up my Munich lager style putting down a Dutch Lager with 80g Hallertau on top of it straight away.

Put my Ale and Lager in my 19 litre kegs and carbonated during the week.
Tapped them yesterday for a drink.
The Ale is very good but the lager needs a bit longer as lagers normally do.

Did a Mexican lager and a draught in the fermenter this morning so I have plenty of beer to drink.

Love the look of the Lager.

Im testing a very green and undercarbed Canadian Blonde.
Moved my bottles from sauna to my bar and already noticed some bottle conditioning.
Next weekend will be a better test taste.

Still got Mexican cerveza and my munich lager to bottle up. Possibly next weekend.
