And theyll be toasted in a sandwich press once made up, this is the extra bit that makes them outstanding

Bit out of your way but Murrayland meat at the Churchill Centre have excellent rolled lamb pretty cheap, or if you have a Costco membership they are cheaper again, or I could use my membership to get you in there.

An old Greek bloke from work game me his yiros marinade recipe which I inject into the lamb and chicken a day or two prior to cooking.


I think the spit is coming out Sunday now I've just thought about it.

So the president owns the local pub, says we can get the lamb yiros meat through his supplier (Holco), itll be cheaper he says. Turns up tonight in 2 bags with about 8 butterflied legs in each bag, yep thats right, its not cut up into pieces like i couldve got at the supermarket for exactly the same fecking price. yiros marinade is only on the outer layer of meat, there is like 80% of the lamb that remains untouched by the marinade, its a fecking disaster. Luckily there was massive clumps of marinade powder that i was able to water down and then spread through all of the meat after me and a mate spent a good 2 hours cutting it all up. Cost a heap of beers and wine and probably the chance to win tomorrow ;)

Yep, the marinade needs to get into the meat, I'm not sold on the powdered yiros marinade either, tastes not much like traditional Greek yiros.

You need to soak and inject the meat with the following mixture:
Olive Oil
Tomato Paste
Salt
Pepper
Oregano
Onion
Garlic
Paprika

If you're doing chicken, add lemon juice.
