Well, my first go with the 3-2-1 method and my word, doesn't that work a treat.

3 hours smoking with cherry wood at 230°F. Beef short ribs and 2 lots of pork ribs, used a apple cider vinegar and apple juice 50/50 spritz sprayed on every 30-45 minutes.

The pork ribs then came out and got wrapped up. The smaller one got braised in apple juice and sugar. The larger one in Jim Beam.

They spent another 2 hours wrapped / braising at 230°F.

The pork ribs uncovered, basted in Sweet Baby Rays BBQ sauce every 15 minutes for an hour at 250°F.

Not quite the lofty standards of seasoned campaigner Booney but here was my first crack with the smoker.

A beef brisket with a BBQ Memphis rub along with pulled lamb with a yiros rub.

The lamb just absolutely melted, the brisket flavour was amazing but I could've perfected the cooking method.

I've got the bug and will probably do a couple on the weekend to tinker around, the smell wofting trough the house and neighbourhood was something else.

I could've presented a better photo of the pulled lamb but I was probably 14-15 beers deep by then.

That was only my fourth cook mate, it doesn't take long before you want to start playing around with things. My first brisket was dry, I think I need to get injecting it or wrapping to keep it moist*.

You've got the same smoker as me, around 25-30 heat beads gets you to 250°F? About every 30 minutes add another 4-6 beads?

Yeah, I took off for a bit to get some spray bottles, one to put canola oil in and the other to put coke in to give them a periodic spray, the temp dropped significantly so I ended up nestled close by for the afternoon.

Worked out well as the wife had to forfeit her laptop and our big TV to the verandah so I could multi-task (punting/observing).

I was gonna grab beef ribs but the chick there talked me into the brisket.

I was always a "Closer to the bone, the sweeter the meat" sort of operator.

I'm playing with the fire about every 30-45 minutes, couple of extra beads in the hot spot, move some smaller burnt off ones away, add some wood to smoke etc.

Tip - If you buy the wood chunks from Bunnings stick them to the side of the fire box for 30 minutes before you put them on the heat beads, gets them nice and dry so they fire up quick and give off plenty of smoke.

Did you put your beads etc. on the rack in the off-set box or don't bother with the rack? I found it a pain in the arse to move the heat around with the rack in there.

I did happen to chuck a scotch fillet in the off-set box for 15 minutes to have for lunch, it was awesome.

OK, cheers.

I soaked the cherry wood chunks a couple of times and chucked them in dry others.

I used mainly heat beads but also had charcoal I wanted to use up, I found that got the temp back up quicker to where I wanted it.

I'm keen as for the weekend now for another crack, I'm contemplating what to cook though.

So many different types out there. Suggest you find one in your price range at Bunnings or BBQ Galore then find YouTube videos for it.


Me personally have a gas fired one due the limited space I have at home. It works and I've worked out what's best over time. Even cooked a cricket club Thursday night dinner in it for 30 people. Had to cook in batches and reheat but it was a hit.
