Right...
I have scanned 5 images, all single pages. Now I want all 5 pages to be on 1 document (i.e. 1 of 5, 2 of 5 etc...)
How do I achieve this???

What format are the 5 images saved in?

You can't do it with Adobe Reader, you need Adobe Acrobat.
Acrobat is the full version of the software that enables you to create PDF files, print to PDF et al.

The reader is just a program to view those files.

So what you need, is Acrobat. Then it's a simple process of opening one page, then "inserting" another (and telling it to go before or after etc).

Nah mate, that's just a reader, have you considered just scanning your images and putting them into something like Word?

If you wanted to stick by Adobe (I know I wouldn't) you'd need something like this:

Don't have much experience with this but Foxit claims to be able to convert .pdf to plain text if that is any help.Apologies if I am barking up the wrong tree but check it out yourself

edit:just had a closer look and this feature is not free $39 for all the bells & whistles
