Agree on muscle mass yes. If you take an untrained man & woman of same stats, put them on same hypertrophy regime, same diet etc - the man will likely gain more muscle mass over time due to, put simply, higher testosterone (other factors at play, red blood cell count etc)
Mouncey has probably been in a gym due to sport background, so would have made muscle mass gains, and would have benefited from that higher testosterone.
So what do you think happens to her body when she transitions to low testosterone, high estrogen? Loses that muscle, gains fat, loses agility, stamina decreases, endurance decreases.
