Sir Kenneth Branagh would fit in this category. He seems to do nothing but Shakespeare and other period films.

I'm surprised no one has mentioned Chuck Norris 
Cruise doesn't get terrible roles, he just gets out acted by the other actors he appears with, e.g. Jack Nicholson, Few Good Men, Jon Voight Mission Impossible etc etc.
