None had a huge influence, i'd probably say Mead or David Baker.

The biggest Port influence, especially recently, at South is arguably Fitzy, Port Noarlunga....

Fos Williams coached at South ... briefly.
Vic Johnson coached South to the 1935 premiership.
Michael Dittmar topped the goalkicking at both clubs in the late 60s/early 70s.

I would agree, one of the mistakes South made was to give him the sack after he said he needed another year to get his business running properly so that he could move from part time to full time. How many other Coaches have the commitment to the club of using their own business to sponsor the club?
