Nickelback don't bother me too much....they are thrashed on the radio which kills them a bit.
The thing is the band sticks to a "formula" of songwriting. Hate them as you might but many bands have stuck to a sound and songwriting that sells and works.
Some of the top of my head :
KISS - tried to change doing 1981's concept album "The Elder" with choirs and strings on it and it BOMBED big time!!
Def Leppard - Tried to go "grunge" in 1996's 'Slang" album...that stunk and did not sell.
Duran Duran - Tried with 1986's Notorious album and went all "funk"..that did not sell as well as others.
Queen - 1982's Disco album "Hot Space" was a shocker too!!
They just stick to what is safe....you know what you are getting...no suprises really ....like getting your Meat and 3 Veg.
Just think it is a bit "cool" and "fashionable" to hate them so much.
BTW Im not a massive fan either but can tolerate them ....

You can also put U2 in the category too. Once they lost that "singing from the streets of Ireland" type style and started singing from the mansions of LA, they lost it for me.

4 lads from Liverpool changed their style of music and went ok in the 60's & 70's
