The current topic is low and slow cooking recipes and methods, feel free to share your knowledge......or to throw out some of your creations in general.

Now there is one topic I can't contribution much to. I have almost zero cooking skills beyond the occasional BBQ. ;)

Ive tried MT79's pork belly in the air fryer about 6 times in 3 weeks now, amazing pork crackle every time, easy to cook.

I picked one up from Crestline a couple of weeks ago, I reckon I'll smoke mine on the weekend.

Absolutely smashing the slow cooks this winter, whether that be in the weber, oven or slow cooker.

Going to have a crack at 5 hours cooked ribs this weekend. If you havent already have a crack at the Alabama Rub woolworths is selling at the moment. Absolutely amazing, im chucking it on everything at the moment from meat to chips to roast veg.

Going to have another crack at making bacon again soon.

Pork Belly
Salt
Sugar
Pepper
Paprika
Curing salt

My first attempt whilst not a total disaster didn't use any nitrate and was therefore a slightly different colour to normal bacon.

I've been giving the lamb sticky rips an absolute hammering the past couple of months in my cooker. I cook them for 2 1/2 hours at 160 and by then, the fat has rendered out of the ribs and leaves a slight crackling and you just put them in your mouth and suck the meat off the bone. Absolutely delicious. Ribs combined with my potato bake and a nice red is just about the perfect match. 12 months ago, I could get them for $6.00 a kilo and they're $13.00 a kilo now which I'm still happy to pay as they are the best.

Good luck with it mate, once you perfect it you'll love it, a mate from work does it.

Personally, I love pork belly too much to f*** around with it.

It is perfect crackle.

Use a good amount of salt.
After 20mins or so then with paper towelling soak up moisture.
This also allows Pork to get too room temperature.
Apply oil and extra salt into skin.
Air Fryer 20mins on max temp (200)
Then another 30mins on 160.
Was around 1.2kg.

Two weeks ago foodland had pork belly for $7/kg. They were in nice little 1kg packs, perfect size for the air fryer. I purchased 6 of these little critters, having the last one tonight, still not sick of them

Getting off the weber tonight and going to hit the wok,

I havent had two minute noodles in years and the kids got me to try Maggi Mi Goreng Hot & Spicy the other day and **** me they were the bomb!

As crap as it sounds im going to have a go at mixing them with a bit of bok choi, bamboo shoots, shallott and chinese sausage.

Not my most gourmet meal ever but reckon it could turn out pretty decent. :)
