Nothing stopping you making them separately but yes logical to do them together.

Testamentary Trusts (TT) are the go. That's where a good solicitor & accountant come in handy

Mrs Jimmy and I have different old family assets so we have similar but different wills (ie) joint assets pledged to the surviving other, and then kids, but old family assets going straight down to kids via a TT. You can also have flexibility where the assets are held in a TT for the kids but your partner gets life privileges (eg) tenancy or the dividends. The kids cant **** up your partners life.

Plus hard for the next Mrs Jimmy (aged 1/2 + 7 years) to claim against a TT

This is how the rich keep their money.............

The Public Trustee and ATO are not your friends in this area

My only other advice is make it simple and don't try to control from the grave.
