Johno a mix of the above.
Buy good meat, beat it, and use marinade and cook quickly.
Remember a marinade needs an oil (olive, peanut sesame), an acid (citrus, vinegar, wine) and flavour (spices from the rack).

the meat is from a butcher so im assuming good meat?


i will try the cookin slow and beating the shit out of it.


when i usually make stir fry i brown the meat, put it aside, cook veggies then put meat back in.

is this a bad move?

it's a stirfry, they are supposed to be cooked hot & quickly! a good cut of meat, a little bit of oil & lots of heat!

Yep, bad move.Twice cooking the meat will make it tough.

Stir fry - hot and quick as noted.
If you want to go quickly, go alone.

If you want to go far, go together.
