Bad luck Radelaide looks like i'm staying haha (for now)! Probably a good thing, would've been a very difficult discussion to have with the family.

Feel for those impacted though, it's like a third of staff being spoken about being relocated and a lot of people who aren't in a position to do so, so will take packages.

Some deflated people today.

Off the the superloop concert tonight (if anyone has a cheap ticket/passout let me know ;) ) and then jumping in the car with a few mates and heading to Pt Hughes for the rest of the weekend for golf, pub and kid/wife free time :D

Tonight’s rack of lamb on the Ziggy.... carrots and spuds on soon. 15 minutes then the main event.... while I down a beer or 5, decant a red, and enjoy listening to the Swans getting towelled up!

Lamb shoulder just gone on the Ziggy, first beer hitting the spot. 1 hour I reckon at 200c job done! Found a 2016 Coonawarra red to wash it down. Nice end to the day!

We got a pork belly about to go in the air fryer...then roast up a medley of veggies...washed down by a 2019 homebrew....

It is perfect crackle.

Use a good amount of salt.
After 20mins or so then with paper towelling soak up moisture. This also allows Pork to get too room temperature.
Apply oil and extra salt into skin.
Air Fryer 20mins on max temp (200)
Then another 30mins on 160.
Was around 1.2kg.

And im not a massive pork lover as it doesnt sit well, given its fatty content. But now with the air fryer i find it much more palatable.
