Used to piss me off when the ex would douse her lamb with it and then not eat it all, I couldn't even pick at it later, even with making it swim in gravy.

I do drown the spuds and veggies in gravy though

My spuds are a delicacy on their own, I get people trying every night to perfect them after they've sampled mine.

It's in the technique.

A bit of a drizzle of olive oil on the base of the tray.
Shake the spuds up in a bag with steak season, garlic powder and paprika.
Place them with the flat side up so the majority of the spud forms a crust without sitting in oil, give the top (flat side) a light spray of olive oil.
Cook at around 160 and flip them over when they look set.

You won't get any soggy bits and they'll be as fluffy as inside.
