You walk in and swipe your card before you go in and then the gate opens for you to go in.
You then pickup your drinks and just walk out without scanning your card again?
The cameras see what’s in your hands and charge you accordingly?
It’s so bizarre.

Usually works out at a bit less as you may get an unused leave lump sum tax offset. But remember you can only claim the tax free threshold once so if you earnt 60k and got a 30k payout you'll be getting taxed at 32.5% minus the offset if you're eligible.
The offset doesn't show on the Estimator but is worked out for you automatically if you put the lump sums in the correct areas of the tax assessment and your income statement from your employer should details that.

My understanding is redundancy payments are calculated at a different tax rate, but any accrued leave isnt. Could be wrong though.

Correct, my answer was solely in regard to accrued leave.
Redundancy payments will be in a different category on the Income Statement and put in a different spot in the assessment (and treated differently).
