But they can't make up their minds when he "died" and came back, that changes every year. Now, call me cynical , but if something like a dead bloke rolling a boulder away from the entry of a cave and returned from the dead doesn't encourage you to write the date down for prosperity , what does????

It is because neither date was chosen for any sort of accuracy, but rather to take over the dates of pre-existing non-Christian festivals and thus obliterate them - Christmas for the Roman Saturnalia, and Easter for older Jewish celebrations, and they thus followed the dating systems of those event to maintain the clash...

From Wikipedia:

"Saturnalia was an ancient Roman festival in honor of the deity Saturn, held on 17 December of the Julian calendar and later expanded with festivities through to 23 December. The holiday was celebrated with a sacrifice at the Temple of Saturn, in the Roman Forum, and a public banquet, followed by private gift-giving, continual partying, and a carnival atmosphere that overturned Roman social norms: gambling was permitted, and masters provided table service for their slaves.[1] The poet Catullus called it "the best of days."[2]"

"Easter is linked to the Jewish Passover by much of its symbolism, as well as by its position in the calendar. In many languages, the words for "Easter" and "Passover" are identical or very similar.[14]"
